Elizabeth’s Legacy

In 1995, Elizabeth Copeland received a surprise call from her husband, Richard, informing her that he purchased a sandwich shop while on a business trip in the hopes of providing Elizabeth the opportunity of becoming a restauranteur. Elizabeth at the time was a school teacher and music instructor. Shocked by her husband’s news, Elizabeth was most surprised to learn that the sandwich shop was located in Salt Lake City, Utah, when the Copelands were living in Delaware. 

We had always toyed with the idea of having our own restaurant someday…that day just came sooner than I expected. Richard had complete confidence that I could do it.”  –Elizabeth Copeland

After relocating their family of seven, Elizabeth’s sandwich shop quickly took off, receiving their first request for catering within the one month of being open. In 1998, the Copelands sold the sandwich shop, and launched Elizabeth’s Custom Catering, doubling their business within the first year alone. 

 

As the company’s clientele grew, so did the recognition for their exceptional food and service. In 2003, Elizabeth’s was first featured in Utah’s Business magazine and was further recognized in 2006 as one of the top ten Woman-Owned business in Utah. In 2011, Elizabeth’s was listed among the top 12 careers in Utah, and the following year received the Chamber West Business of the Year Legacy Award.
 

Elizabeth’s is proudly a family-owned and operated catering company. Elizabeth’s son, Ken Copeland, is currently the CEO. Elizabeth and Richard are now retired from the catering business and living in Florida.
