Elizabeth’s Legacy
In 1995, Elizabeth Copeland received a surprise call from her husband, Richard, informing her that he purchased a sandwich shop while on a business trip in the hopes of providing Elizabeth the opportunity of becoming a restauranteur. Elizabeth at the time was a school teacher and music instructor. Shocked by her husband’s news, Elizabeth was most surprised to learn that the sandwich shop was located in Salt Lake City,
“We had always toyed with the idea of having our own restaurant someday…that day just came sooner than I expected. Richard had complete confidence that I could do it.” –Elizabeth Copeland
After relocating their family of seven, Elizabeth’s sandwich shop quickly took off, receiving their first request for catering within the one month of being open. In 1998, the Copelands sold the sandwich shop, and launched Elizabeth’s Custom Catering, doubling their business within the first year alone.
Elizabeth’s is proudly a family-owned and operated catering company. Elizabeth’s son, Ken Copeland, is currently the CEO. Elizabeth and Richard are now retired from the catering business and living in Florida.

We at Elizabeth’s are incredibly thankful for the direction and example Elizabeth & Richard Copeland laid as groundwork that makes Elizabeth’s Custom Catering still successful today!
